Turkey size:

order the "all natural" turkey at Whole Foods (free range,
antibiotics-free birds).  A 13 pound turkey is the max. size
that will fit in the Romertopf, and is plenty for 12 people,
with leftovers.

Turkey stuffing:

- Cornbread (enough to yield 8 cups when crumbled)
- 1 3/4 cups chicken broth
- 2 sticks (unsalted) butter
- 6 medium (yellow) onions
- 1 red onion
- garlic
- 1 package celery (preferably one with leaves)
- 1 bunch (fresh) sage leaves
- bay leaf
- cloves
- 1 bundle mustard greens
- 1 carrot

That's it.
